I just bought pot of rhubarb and planted it. Do I just leave
and in the fall cut it back?

As Steragram says, it usually needs a couple of years growing undisturbed to gather enough energy to produce succulent stalks.

You don't need to cut it back in autumn, just let it die back naturally. A mulch of composted animal manure at the start of winter will help protect the crown during the cold weather.
