I have a daisy bush 'olearia' which is growing out of control, it has finish flowering how hard can I cut it back ?

Can be pruned, and that should be done immediately after the flowers go over. A third of the growth removed should be fine, but not more than half.

Rather depends how long its been in its place - if its years, it will be very difficult to get the roots out intact. You could try, but best done in autumn rather than now. You may find a very large rootball - try to get it out as intact as possible. Water in well in its new position and keep watered during dry spells.
