I have recently cut my Hawthorn bushes down by half and want to make them into a nice shape now that they are growing again.... Any tips?

Not sure when you say shape, if you mean semi topiarise it. But you can prune to any loose shape with a hedge trimmer or secatuers. No reason why you couldn't tidy it now.
