I have grasses which i only know as pony tail grasses,they have gone very large and have all fell over flat ,can I cut them back

Stipa tenuissima is the one I know as Ponytail Grass.
Wrong time of year for cutting them back, but if you need to then you would probably get away with it. Grasses are very hard to kill.
