Should I cut down the stems of a day lilly that has stopped flowering, and if I do, will I get more flower spikes? I thought day lillies kept on flowering through the summer, but mine have only had one flush of flowers.

yes remove the flower stem as this stops the plant setting seed. the plant may then decide to try another flower spike to make seed.

Like KM I just dead head its easier than getting to the base of the stem to cut it out!

It depends on variety if they rebloom or not. I normally deadhead and leave it to die down by late autumn.
