Bara Brith - a welsh cake yummy and easy to make

Bara Brith -is a welsh cake made with dried fruits. The slices can be buttered if
you want.
Prep + cooking time about 90 mins
3oz (80g) currants
3oz (80g) sultanas
3oz (80g) chilled butter
2oz (50g) candied peel
2 eggs beaten
1/2 teaspoon ground mixed spice-sieved
3oz (80g) soft light brown sugar
12 oz(350g) self raising flour-sieved
3.5 fl oz (100ml) water (or cold tea).
2 tablespoons of warmed honey (for glaze)
Put the currants and sultanas in the saucepan and add 3.5 fl oz(100ml) water (or cold tea). Simmer gently for 15 mins, drain well and allow to cool for 15 mins.
Put fruit in bowl, and candied peel, mix in butter. Beat in eggs, sugar, spice and fold in flour and mix well.
Grease and line a 2lb (900g) loaf tin and spoon in the mixture smoothing the top.
Bake in oven Gas mark 2 (elec 150C / fan oven 130C) for 50-70 minutes. Check with skewer to see if cake is cooked.
Cool cake for 15 minutes, on rack, and glaze with warmed honey.

Mmmmmmm! when my cousin comes she brings welsh griddle cakes they are yummy too!! will try this thanks for the recipe, my grandmother was born in Wales (Pentrych)

Oh I wish you hadn't posted that picture, I'm drooling at the mouth. My Nan was very Welsh and she made it often....Yummy. I'll cut n' paste the recipe in the hope that I'll soon be able to cut it with a knife.
