Elderflower Fritters were enjoyed by those taking part in a Forest School Day outing in Somerset.

My daughter said they tasted really good and the preschool children lapped them up for dessert.

Never thought of doing these as fritters. Usually, we have them as elderflower pnacakes.

How do you make them then? Sounds interesting. Do you use the fruit or the flowers.

The flowers. You make the usual pancake/drop scone batter, cook the first side, insert the flower clusters head first into the upper side,, snip off the stems quickly, then flip over and finish off - easy! ;-))

I saw these being made on a BBC2 prog by some guy who was living in the woods, it was a very interesting prog and he made these for a sweet following wild rabbit stew that he cooked in an underground oven, a hole in the ground and twigs on top, I loved this prog, brought out the wild in me !!!
