Its beautiful Spritz looks huge how big? is it a kind of a thistle my daughter would love this

I think the flower head is about 5" tall, and I can't get my fingers round it - so it is a big flower! No, not a thistle, its common name is 'Cardoon', and it is in the artichoke family.
