Lol! Bamboo. I love duck as a starter and make my own little conction with it.

Plenty of meat on this one!! But you're right Suey & SB....it is a lovely one......a lovely, big, round, plump, juicy one!! yum yum...LOL!!

Never mind as a starter, I like it instead of turkey, makes a great roast and a fantastic stock afterwards. I'm curious now as to what you do with it for a starter...

Nothing special but I'm famed within the family for my Prawn Cocktail dish as I make the sauce from scratch and use BIG juicy prawns and.......ooh, stop it, I'm salivating here!

Anyway, the duck thing is very simple. Starter for 2:

Remove the skin of 1 duck breast and cut into small slices. Cook in a small pan with olive oil - I season the oil before I put the duck in, with salt & pepper, both from mills.

Whilst the duck is cooking, cut 3 slices off a round french loaf - forget the name of the loaf - and lightly fry in a griddle pan in olive oil. I normally drizzle olive oil over the bread when it's in there so it fries nicely and becomes crunchy.

When both the bread & duck are done - the bread will just show the griddle lines and is more like a lightly fried toast - cut the 3 slices across and stack almost like a wigwam effect by resting one edge on top of another around in a sort of circle of petals, if that makes sense?

Cover with a handful of washed Wild Rocket before placing the cooked duck piece onto the rocket. Then drizzle all over with hot sticky plum sauce and season with the mills again. WA-LA!

Very tasty ans surprisingly light for a starter.

Sounds delicious - but as a heartburn sufferer, I think I'd need to double up the dose of the pills! I'll give it a try though, thanks for the recipe.

It is not recommended to eat muscovy ducks as they filter life forms out of the muckiest ponds available , where few other wildfowl can make a living , they say they taste of mud!

Bamboo I hate to tell you this but youre supposed to take the plastic bag off, then it tastes a lot more like duck when you cook it, and a lot less like plastic !
