My own recipe for pumpkin mousse
Fry an onion, cook 1/2 kg pumpkin with a little amount of stock, add salt and pepper, cook it until all the liquid is absorbed, add +/- 150 gr. soft goat's cheese and put it in a blender until smooth. You can also add herbs (parsley, fresh coriander,...)
Can be eaten warm or cold.
Nice as a dip, with your sandwiches, or between layers of potatoes, with pasta, or between some sort of pancakes.
