Noticed mine poking through too this morning Yorkshire, have a yummy recipe for rhubarb cinnamam streuzel cake.

Rhubarb and Cinnamon Streusel
175g/6oz plain flour,
2 teaspoons baking powder,
1/2 teaspoon salt,
100g/4oz butter,
100g/4oz caster sugar,
1 egg,
6 tablespoons milk,
1lb rhubarb stewed and sweetened to taste, cooled and well drained,
Topping
40g/11/2oz plain flour,
50g/2oz demerara sugar,
1 tablespoon cinnamon,
40g/11/2oz butter,
Preheat oven to gas mark 5/190c/375f,
Grease a 9inch deep tin, preferabley loose bottom,
Sift the dry ingredients and rub in the butter, beat milk and egg together and add to the dry ingredients to make a soft dough, spread in cake tin, spread drained rhubarb on top,
For the streusel topping mix the flour, cinnamon and sugar together and rub in the butter until mixture resembles fine breadcrumbs, sprinkle over the rhubarb, bake in preheated oven for 45mins.
Yummy on its own or with cream :-)

Looks just like mine Yorkshire .. I have put a pot over one lot to blanch it although i'm not sure thats a good idea as I read somewhere that it weakens it for at least another couple of years .....

I'm not sure about the pot weakening it Amy, it forces it on does'nt it, I never cover ours as we don't like forced rhubarb, glad to hear yours is coming on, thanks everyone, Homebird I do seem to be the first with Rhubarb, don't know why as its always damn cold here.

I'm not that keen either Yorkshire I don't think it has the same taste .... you must be somewhere near the famous Rhubarb Triangle , that must give you a head start .. :o))

yes Amy, thats our nearest town, called Wakefield, in Morrisons today it was £2.50 for a small punnet of forced Rhubarb, about the lenght of a pencil, once its cooked there would be nothing left to eat,

I remember watching a programme all about the sheds of Rhubarb , I think they picked it in the dark with candles , ( or did I just dream that ) LOL....
Golly I',m sure I wouldn't pay that price for a tiny portion at Morrisons ... .....

they grow it in the dark and burn candles so I suppose they pick it the same also. you can hear it growing apparently in the sheds
