Blackcurrant Jam

Very easy Microwave recipe .. delicious ..
450 g blackcurrants
45 ml water
675 g granulated sugar , warmed
method ....
1. put the blackcurrants and water into a very large microwave -proof bowl . cover and cook on FULL power100% for 5 mins.
2. stir in the sugar. Leave for 2 mins before cooking on FULL power 100% for 2 mins or until sugar has dissolved , stirring often .
3. Cook for about 10 -12 mins. or until setting point has been reached ( I found 10 mins was enough )
4. Pot into hot sterilised jars ,seal,cover and label ..
It really is very simple and so tasty ....

Nothing tastes quite like your own Linda ..can't be any fresher , this recipe is very easy Holly , I finished up making scones as well because we had some cream in the fridge , blackcurrant jam and thick cream on scones ,Yummy !

Oh Amy my mouth is watering homemade jam and scones too, thanks for the recipe maybe I will get round to trying jam making, but will need to grow some fruit first;0))

Lol That's a good idea Carole , do you have any farms near you where you can pick your own , this recipe only makes 2 jars , I shall make more as the fruit ripens .....

That takes me back to visiting my Grandma's ..it was all I ever wanted..for every meal.!..and it was home made bread,and butter from a farm....no one had ever heard of Cholesterol then ! Lol...thank goodness...Just a little technical question,Amy..what is the wattage on your microwave,please..as they all vary,so I might have to adjust the timing,if I have a go..

The wattage on my Microwave is 850 Sandra I've been in the kitchen measuring the size of my bowl it holds 3 litres of water ,when I was doing the 10 min boil it came level with the top and would I think have boiled over if I hadn't put cling film on ( pricked ) so make sure you have a bowl that hold at least that much liquid ...

Thanks for this recipe, Amy. We picked a few Blackcurrants from the allotment this morning and not sure quite what to do with them! Now we know ... lol!! : o ))

Your welcome Sandra you might find that you need the 12 mins when boiling the jam !

Lol Shirley .. I'm not sure that I can give you a recipe for the bindweed ! but the gooseberries make a lovely Jelly to go with cold meat would you believe it come out a lovely wine red colour !

We're going to harvest all the fruit we can this season, then we'll probably halve the amount of bushes as they're so close together, making it difficult and dangerous to gather the fruit. Sadly, we don't have a clue what the Gooseberry varieties are, two different, one very green and hairy, the other more pinky green and smooth. Perhaps the latter is the one you make the jelly with . . . .

Mine are the normal green ones Shirley but the jelly still comes out red.. good luck with it Sandra :o)

I don't see why not Dawn , I can't try it ,my red currant bush is new and suffering from the dry conditions ,let me know how you get on for when I have some next year .. Redcurrant would be nice with cold meats :o)

I make redcurrant jam Dawn and it's lovely. Have made it twice this week. There's a bit more work involved making the jelly, so I just put mine through a sieve. Lol. (not that I'm lazy) hehehe. :o))

No, "We Cant Do Everything", lol. Those rabbits have taken alot of your time, havent they. I won't get depressed, only joking, work tomorrow though, now that is depressing, only joking again, just another day out of the gardening week. Two weeks ago, everything in the garden looked fine, now its looking a bit ragged. Also need to stand back and look at things from a distance to see how things can be improved, i.e. moving plants that are in the wrong place, groan, know its not the ideal time but if you dont do it now, you forget.

Sounds delicious Amy. I made Redcurrant (seedless) jam last night. Granddaughter had it on waffles, and OH on his toast, this morning for breakfast. So, hip, hip, hooray, it was edible again. Lol. :o))
