Olives

Do you pick them Green Kat or wait for them to turn black, how is it that we have a chioce between green and black ?

Amy, this photo is from the last year or year before. I made it in September and they were green. Could not wait till October, because frosts usually atart around this period. They did not turn black. I suppose, there are sorts of olives and this one is green.
