Never knew it was edible Tasteyg Do you eat it ?or is your mother-in-law the only one I think I would have to be really hungry to give it a try lol

I have red and green Amaranthus. I think they are great with all their tassels. We have a weed in Hungary called pig weed, and it is nowhere near as pretty as Amaranthus.

Is pig weed different from Amaranthus Chris ?

The pig weed we have here is very different. It has a tall flower on top the same type of thing as Amaranthus, but it is all dark green and very weed like looking. Amaranthus has much longer prettier tassels that hang more. Pig weed can grow huge if left to grow, but it does not have chance in my garden. It might be that in US they call Amaranthus "pigweed", but in my garden it is a very different thing. I will post some pics of my Amaranthus soon when the tassels have developed further. I believe that I just posted the same plant, we call it pig weed. Do you eat this? It grows wild here in the yard. Jeff's mom cooks it and eats it :)
