Being a curious cuss I wanted to see if this recipe would work with the 2 tablespoons of cocoa replaced by 2 extra of SR Flour. The texture was not bad but they were not keen to come out of the pans. The cake tasted fine and would make a good topping for an Eve's Pudding or any fruit with a sponge topping. I have not given up on the idea of it working, but I am wondering if mixing in a bowl resulted in too much air being incorporated into the mixture, resulting in uneven cooking in the microwave.

I wondered about other flavours too but have not tried any (I am trying desperately not to eat cake!). I thought about adding lemon zest and juice plus just 1 extra spoonful of flour or fine semolina. I will watch your experiments with interest :)

very interesting SG, im surprised it didnt come out so well without the cocoa ~ interesting isnt it. spices and raisins might be worth a try too??

i went to Aldi today but they only had a large container with the same daisy pattern in the bottom.

Gee I'm trying desperately not to eat cake too lol. The lemon sounds like a good idea. I have tried using vanilla sugar and cinnamon sugar - both home made in a jar with vanilla pods and the other with cinnamon sticks but it has not made a lot of difference. The lemon would be stronger. I like the sound of the raisins sticki. I noticed the big cake tins they also had castle shapes for making childrens novelty cakes. I did think I might try mashed banana too. You have opened Pandoras box Gee.

I had to stop making this cake. I'm sure I don't need to add to my weight just as we look like we might get a summer.
