Good morning, Bjs, God bless you for first normal comment I have got since yesterday :)
I do not know sophisticated explanation, just folk one. That is - jam is not conserved like compote (boiling). Once it is sealed, it is done. That is why moulds can easily destroy it when stored at room temperature. When you turn it upside down, the cup is better sealed and it is prevention of moulds. I couldn´t explain in better, sorry :)

I do understand it makes a complete air tight seal.
When I open a new tin of paint or Varnish and only use part when I put the lid or cover back on i always tip them upside down for a minute or two and that creates a seal in the same way.

The recipe said to turn the jars upside down for 2 minutes in the last lot of Blackcurant jam that I made , I must admit it's something I had never come across before usually it's enough to put a waxed circle on the top of the hot jam before putting a lid / cover on it ...

Hi Bjs@yes, that´s right.
It makes some kind of suck (vacuum) when you turn it back, so it fix the seal better.
Hi Amy @ I do not have those rubber circles or I do not use waxed circles on the top before putting a lid, so that´s why I do this magic, lol. Cotton cover I bought here, in one small shop with nice little things from France. Quite expensive, so I bought just 4 :)

I still haven't found that elderflower recipe! Actually, something ate the flowers as they blossomed this year.
I am watching the hazelnut trees as the fruits ripen, at the moment...all shell and no nuts.
I did drink something very old, and very natural on Sunday (at a ceremony for the autumn harvest) Meade. Fermented honey and water. It is delicious.

I can´t believe, Lulu. I have never seen elderflowers to be eaten by insect...If you want I can send you hazelnuts. I have three bushes, but were too great so I cut them drastically, but still have many nuts on their tops. We also have this sort of old drink. Too weak for me :) I love Tunel of Mallorca. That´s good for female evening clubs :)

Actually hazelnuts are not good for my kidney stones (I usually pick kilos of them each year) So maybe it's a good thing they ar not fruiting so well this year!

It taste like Ouzo and I think it is made from similar herbs. It is sweet and dry, I think three types of Tunel are available.
