Peppers and green beans from my veggie patch

Thanks, Lulu and Klananie......and they tasted absolutely delicious. i braised the green beans with potatoe and stuffed the peppers with some savoury beef mince.

Klahanie, this is actually a dry curry and the recipe is as follows-

500g green beans
1meduim onion
1 meduim potatoe (cut into small pieces)
half tsp coriander
half tsp tumeric
half tsp jeera
half tsp chilli powder
1 tsp garlic and ginger
one and half tblsp of oil
salt to taste

Wash beans and top and tail same. Slice beans as preferred.
Heat oil in pot and when ready add your onions, garlic and ginger and saute onions till transparent.
Add all your spices and cook for a minute.
Add your beans and potatoes and mix in with the onion and spices.
Add salt to taste
Add about two tablespoons of water so as not to burn the curry. Monitor the pot so as not to burn the curry. if needs be add a lityle more water if needed.
When the potatoes are cooked the curry is ready to eat.
Serve with rice or roti(Indian hand made bread).

Klahanie, you may reduce the quantity of green beeans and add a bit of peas, carrots, cabbage or cauliflower, whatever yo may fancy. Or, just two of your favourite veggies.

I think I like the recipe as you printed it. I think that the other veggies just complicate the taste?.
