Inga edulis - Ice Cream Beans

Inga edulis - Ice Cream Beans (Inga edulis - Ice Cream Bean)

These ice cream beans are ready to be picked and eaten. They taste just like ice cream, hence the name. Photo taken June 25, 2013.

Yes, and the edible texture around the seeds are like cotton candy.

Yummy,... I have never heard of it. Should I look for them in the store?

It becomes a huge tree here. I have one in a pot, which I've had for at least 15 years. I won't put it into the ground because it grows so very quickly!

I've never seen it for sale in a store before. It's grows wild in many Latin American Countries (in subtropica/tropical climates). It's native to Central and northern South America.
