A plantain with burgandy/brown leaves

i have quite a bit of plantain in my garden which i normally
pull up but this year i decided to let some grow. ive never seen it reach a fully grown plant until now i quite like how it looks and
as it has i good few uses quite a bonus.
not seen one with brown leaves tho, ever!

Apparently according to google, you can cook with it, Mary b! I bought the plant originally.
