We leave them on the tree as long as we can Bjs and we juice them. We inherited these trees. I do not know why they are so popular here. I personally would not plant them. I like these better than the Red delicious. But we have many other choices also (for eating).
The juice is fine. We freeze it and drink it during the summer with little bit of lime, mint and ice cube. We get about 30 litres every year.

We have some ancient trees here... Yellow Transparent. The skin is a lovely golden yellow and they're very juicy. The juice is medium sweet with a great tang. I have a young tree planted not long before we came and it's just starting to bear fruit... don't have a clue about the variety but I think it might be Paula Red. I lost the whole crop to the birds! What a mess! We also have what I think may be Snow Apples...they are a Orange-Red and the flesh is very white. A neighbour has Macintosh and Cortland and we were discussing taking a couple of scions for grafting.

I was a bit concerned that there wouldn't be any left for me but ... LOL... everybody loves apples so everyone gets his/her share. Like you I've found that juicing the apples is the best way to use them... and a bit of applesauce too.

The French used to flood the english market with this var they were dreadful sweet and tasteless ,fortunately there are a lot more apples being grown in the west of the UK and we have a lot of choice now.
I suspect if Golden.Delicious are grown locally they taste a whole lot different to the imported ones.
Sorry France you can make Wine but not much else.
