Pickled lemons and Limes

delicious as a garnish with fish ,Moroccan Indian or Thai meals ..

I'm glad you like it .
O.k the recipe is as follows :- it's very easy ...
ingredients :-
6 lemons or limes not waxed , i used 4 lemons 2 limes
finely sliced .
25 g salt
1 tablespoon Paprika
2 tablespoons caster sugar
5 tablespoons olive oil
300 ml Sarsons pickling distilled malt vinegar
Method
Layer the fruits and salt in a colander , cover and leave for 24 hours ... Do not rinse ...
Layer in a sterilised jar sprinkling paprika between the layers ( A smoked paprika makes such a difference )
Mix together the sugar ,oil and vinegar and pour over the fruits .
Seal and store .
Gently shake the jar to mix the oil & vinegar regularly ..
Mature for a couple of weeks before using ..
