This is the first time I'm growing this, but you have to cut it in half lengthwise, scoop out the seeds (the seeds could be brined & roasted for a tasty snack). Drizzled the 2 halves with olive oil, salt & pepper, place in a roasting pan cut side down & roast at 350°F for about an 1 hour. The flesh becomes soft & sweet like sweet potato. It could be cubed, seasoned or served as is, mashed, added to stews or make butternut squash soup. It's a versatile vegetable. It's really delicious. It's also called 'Winter Squash' because it has a shelf life of about 8 months if stored in a cool, dark place. It good healthy eating. It's nutritionally dense. It makes a nice side dish for steak or roast chicken. It could literally be a potato substitute.

Looks good Paul. I love Butternut Squash and we deseed and take the outer skin off then cut the flesh into thick slices and lay in a tin, brush with oil and roast for about 40 - 45 minutes reg 190 - 200. We only do half one day and half the next.

Interesting way to cook, sounds like it’s a delicious accompaniment to a meal. ( or a meal itself )

It is quite a meal or perfect if you have a crowd to feed. Sounds real good Linda and goes well with everything esp roast chicken. I prefer it cut into chunky cubes with a little butter, salt 'n pepper, but I'm really looking forward to butternut squash soup, perfectly seasoned with coriander and half an apple.
Kate: Here is a quick video on making the soup. There are many variations, but this will give you a starting point, then you make it your own (maybe you want to replace the apple with a little honey, maple syrup or nothing) It will be delicious regardless. Enjoy...
