Tragopogon porrifolius - seedhead (Tragopogon porrifolius)

This is the first time I have grown this biennial but the seedhead looks promising for next year's plants

Will you be eating the roots?

I was only growing it as an ornamental but I guess I could dig it up after it has set seed and see how tasty it is

I've never eaten it but remember on 'Victorian Kitchen Garden' they said it tasted like Asparagus. I've also seen it said to taste like oysters and creamy coconut. Let us know what you think.

I have heard it referred to as vegetable oyster too

You'll have this everywhere if it floats on the wind. It looks a bit dandelionish........
