I make a cold cucumber soup that has fresh dill in it. Six cukes peeled, seeded blended up with chicken broth, yogurt, dill, garlic (or onion) and salt/pepper to taste. Best if chilled over night for extra flavor.
We serve it with small red potatoes that have been nuked for a couple of minutes and then smashed flat with a heavy frying pan and fried in vegetable oil. Top with a dolop of sour cream and bacon bits for a quick summer meal.

Chopped up in a salad Mike. Or with salad leaves. OK with cheese too. Pretty good on fish too, after BBQing!
