Help !! Recently I have potted an Acer in a nice big pot, wel drained, never too dry, good soil and sun all day. The leaves turned red, as expected, bet over the last few weeks they have been drying-out at the tips and are curling. What can I do?

It probably a combination of factors here that end up producing this.
Full sun all day and funnily enough, never drying out!
If you have planted a small rootball into a large container, the outer compost will often stay just too wet for the young roots so their tips rot off and the plant can't then take water up. The irony is that there is plenty of water in the compost but the plant can't use it. You would have done better to move up gradually by a pot size each jump. This allows the roots chance to fill the next body of soil up and the soil doesn't stay wet as long.
The hot sunny weather of late will just have helped crisp up those leaves. Remember, Acer palmatum is an understorey tree in it's native Japan and is adapted to part shade/dappled sunlight.
