If you mean the dried seeds from your crop, of course you can. But depending on the variety, you should sow them either in October or November for an early crop (the Aquadulce type) or in spring.
Personally, I never try to overwinter them but start them very early in paper pots which I then plant out as soon as the weather allows. This gets just as early crops I find as overwintered plants, which often have frosted new growth in the late winter and spring.
