A lot of fruit is ripe on my crop (3 different types). Can I pick and eat the fruit and/or make green tomato chutney with those that arent showing blight (although the leaves are stained) or will it make us ill? Thanks

As long as the fruit itself is clean then you may use it. Blight is actually harmelss to humans, but it does make the fruit rot so inedible.
If the fruit is clean then you can also artificially ripen it, in a brown paper bag with a banana skin. They soon turn red like that.
