when do you prune french lavender

Normally immediately after flowering has finished, and then quite lightly so as not to cut into old wood.

I do it immediately after it's flowered.
I trim back about 2 or 3" on mine.

Autumn usually, to take off the old flower spikes to encourage the plant to stay compact rather than go woody. You may get away with it in Spring but you could run the risk of cutting off the new growth.
