Garlic would be another possibility it needs a couple of months of cold. Planting in autumn should mean its ready for early summer. This is only based on my one attempt with elephant garlic but it did seem to work well!

Hi Raylockett and welcome to GoY. What are your winter temperatures like? It is possible if they are mild enough that you could grow several different veggies
