I have a eucalyptus gunni plant which has been in a pot for over 3 years, I want to plant it out. Can I do it now, should I prune it first, if so how?

If the plant has been outdoors all winter you should be fine planting now. I personally would let it grow this season before cutting back perhaps next year in late spring.

once palnted out this can be quite a fast growing shrub, so keep well pruned

This will easily grow to the height of your house so plant it at the far end of your garden.
Gunnii is usually grown for its juvinile foliage so if you don't want a big tree prune it yearly.
Crushed leaves smell great.
