A culinary question but I'm sure it's admissible.
I have to make a veg curry, but my son-in-law wants potatoes in it which I've never included. Presumably I'll have to cut up and parboil the spuds. Won't they fall apart when I put them in the curry ? Or are some spuds better than others for this job ?
The curry sauce etc is easy, it 's just the potatoes that worry me. Can anyone help ?

Use a waxy potato and don't parboil first.

i have done pots in a curry before, you just skin them and cut them in quarters put them in when you have liquid all done, you can use any pots, i use either maris piper or jersey pots.

as above , peel and cut into small cubes and add near finishing time , gives a smooth taste to curries

Curried potatoes (curry aloo) is a very popular Indian dish and easy to do. I love vindaloo which comes from the name vinha aloo, meaning vinegar and potatoes, so to keep with tradition I add a few halves of potatoes when I make it.
I boil the potatoes for about 3/4 of the way, make the curry and add the potatoes to cook them fully and It always seems to work.

Thanks again guys, I just picked a couple of different potatoes out of the cupboard here, peeled them, cut them up, sort of half boiled them (par boiled ?) and put them in the veg curry along with everything else and they were perfect. What was I worried about ?
Daughter's family here in San Diego were delighted with the results.

My advice would be to buy the very small new potatoes, do not part cook them first and just drop them in the mixture prior to cooking.....we cook our curries in our slow cooker.
