I think I have a cordyline or a phormium. It is now about 8 ft high and has quite a thick trunk. How tall will it grow and can I strip off the bottom leaves which are brown and hanging downwards whereas the green ones are upwards and spiky?

Sounds like Cordyline, Phormium doesn't form a trunk. Yes you can pull off the brown leaves.
