I planted a rhododendron last year which flowered beautifully, but this year produced only one whole flower and the rest seemed to go to seed.

It could be building it's strength after being planted. The flowers that came last year were probably made before you bought and planted it. I'm sure that it will return to flowering when it's ready. Deadhead it if possible to avoid it wasting energy on seeds. If you grip the flower stalk cluster and bend it over it should just snap off and leave the new shoots around it.
