How do I know when my beetroot is ready for eating ? Last year I grew Boltardy, which said golf ball size was right but I've just grown a mixed packet and they're already larger than that.
Perhaps I should wait until the tops die down like spuds and onions ?

No don't wait till the leaves die or the whole beetroot will be useless. You can harvest them now if the beets are bulging through the soil or leave until they are bigger. You could always try pulling one and see.
