Does anyone have any idea for how I could use the massive basil plants that are in my greenhouse? I split a supermarket pot in the early summer into three clumps - all now about four foot high with stems like tree trunks! The leaves are a bit tough for pesto but they smell wonderful.

Freezing might help to soften them.

Thanks! I think soup might be a good option. There'll be rather a lot of it......

You can also chop the basil up mix with water and freeze as ice cubes to use in cooking.
