How often do yuccas (spanish dagger) flower.After mine flowered I cut the dead stem off 2 years ago now this year I have 4 blooms,Am I doing right and should I cut off the (actually saw they are 2 inches thick) stalks.

Yes, you're doing the right thing - impressive flowers on that one in the pic. Remove the flowered stems when they're over. They sometimes flower twice in a year, sometimes not at all - they like hot weather, so more likely to flower then.
