I have a cordyline(cabbage palm) which has sent new shoots out from the soil. Is it possible to take cuttings?

Not cuttings exactly - those new plantlets are coming off the roots of the original plant, so you can remove them and pot them up - but only if you get a good piece of root with each one, so dig around a bit and have a look, you may find its not possible to sever them with a sharp knife and get some good root.
