My eucalyptus trees bottom leaves are going a pinky colour are they still healthy

No, they're dying back. If that really is a Eucalyptus (the leaves are so tiny its hard to be sure), its stunted from being in a pot - these are one of the deepest rooted trees in the world, and if it can't put down a long taproot into the soil, it'll die, so they're not good container plants. If you want to save it, plant into the garden and cut it back, water well.
