i have a cordyline just coming in to flower do i cut it off once it flowers

Well, it will get taller, but more slowly.

Once it has finished flowering you can cut off to give it a tidy up ...
Normally when it flowers it will produce another branch so you end up with a multi headed plant which I think looks nicer, and stops it getting any taller.
