I have a great deal of rhubarb just now, but very few of the sticks are red. What am I doing wrong ?

Does it really ? I’ve been waiting ages for it to turn red. I guess i’m still very much a beginner, and there’s not much hope for me now.

I think its the new stems that are red Hank. Its starting to get a bit tough now, at least mine is but it still tastes alright... If you are trying to control your sugar intake yo can get away with a lot less sugar if you cook the rhubarb and then add a little bicarbnate of soda. It froths up alrmingly and kills a lot of the acid. Been doing it for years as OH shouldn't have sugar really.

I cook mine in diet ginger beer - adds the sweetness without the calories.

Ooo I bet that's nice. I've tried adding a bit of ginger powder, or putting a bit in the crumble topping. I even tried ginger in the rhubarb and cinnamon in the oat crumble topping and that was good too.

Does it matter? It tastes just the same. They do tend to get green as summer advances.
