I would like to take cuttings of Salvia Amistad : Grows on You

I would like to take cuttings of Salvia Amistad, but just have tall slim flowering stems with no obvious material. Do I just cut one down and remove the flower?

if you don't have any none flowering stems then yes. It will work, I have done similar with other Salvias in the past.
