Something has eaten all of my beetroots from the bottom upward just leaving about 29% of the top and the leaves!! What is it and how do I get rid of it?

Could be chafer grubs. Carefully move the earth where the beetroot was growing and if you find a large cream grub with three pairs of legs close together and a black head - that's Chafer! Seek and destroy! There are proprietory brands of spray you can use, but the names escape me at the moment. Your local GC will be able to help.
