what do I do with lupins once they have finished
flowering?

Cut off the flowered stems. They may put up a few more spikes. Then they will die back naturally and flower again next year.

If you want to collect the seeds to try growing some yourself then wait till the seed pods are brown and crispy and the seeds inside have formed. Otherwise you can trim them down to tidy them up.
