I have a 4year old bramley apple tree and the fruits were so large, even though I supported it well, the leading shoot completely broke off.Can this tree be now trained from the side shoots.

Next year, you will probably get several vigorous "watersprouts" where the leader broke off, and you can probably train one of these as a new leader. Be sure to thin out all but the straightest and most central, though you could leave a backup for a year or so, just in case. Next spring, thin the fruit more severely, to prevent damage to the remaining branches.
