We used to grow many acres of potatoes, but when you grow them commercially you tend to wait for the leaves to die back for the potatoes to fill in size, but watch out for potatoe blight, if you see any signes of blight on the potatoes, cut the leaf stalks off just above ground level but leave the potatoes in the ground so that you can dig them fresh as you want them, they still have their roots to feed, but in doing so make sure they are all covered completely not for the sun to get at them and turn them green
