Tried and tested recipe ~ great for dinner parties cos you can just leave it keeping warm, also great for warming you up on a cold day!

3tbs ghee/unsalted butter
1kg leg of boneless lamb – cut into 1 ½” cubes
1tbs ground cumin
1tbs ground coriander
1tsp ground tumeric
1tsp chilli powder
1” cube of root ginger (peeled and grated)
2 – 4 cloves garlic – peeled and crushed
225g – 275g onions – finely sliced
2 × 400g tins of tomatoes
1tbs tomato puree
125ml warm water
1 ¼ tsps salt
90ml double cream
2tsps garam marsala
2tbs chopped coriander leaves

1. Melt 2tbs butter over medium heat and fry the meat in 2 – 3 batches until it changes colour. Remove with slotted spoon, set aside.
2. Lower heat to minimum and add the cumin, coriander, turmeric, chilli powder, ginger and garlic. Stir and fry for 30 seconds.
3. Adjust heat to medium and add the meat along with the ghee and juice in the container. Stir and fry for 3 – 4 mins and add the onions. Fry for 5 – 6 mins stirring frequently.
4. Now add the tomatoes and tomato puree – stir and cook for 2 – 3 mins.
5. Add the water and salt, bring to the boil, cover and simmer until the meat is tender (about 60 – 90 minutes)
Test the meat to ensure it is tender ~ this is the most important bit!
6. Stir in the cream and remove from heat.
7. In a separate pan melt the remaining ghee over medium heat and add the garam masala, stir briskly and add to the meat.
8. Transfer a little meat gravy to the pan in which the garam masala was fried – stir thoroughly to ensure that any remaining garam masala and ghee mixture is fully incorporated into the gravy and add this to the meat. Mix well.
9. Stir in the coriander leaves.

sorry i dont have a nice picture of the rogan josh but i made some turkish delight at the weekend ~ its fun to make so ive put a picture of that on instead!!!

not a lover of rogan josh Stick i prefer madras but would love your turkish delight recipe ....mmmm i will forget the diet for now lol :o)

this is not hot joanella and you dont really taste tomato if thats the bit you dont like ~ it just comes out as a very tasty rich sauce.
turkish delight was from marcus wareing book ~ 500g sugar and should have been 15 sheets of gelatine but i only had 10 ~ it set ~ eventually!!

no Stick thats the thing..i like curry hot, the hotter the better, OH would probably like yours.. i may treat him to it at the weekend as he doesnt like hot curry.glad your T D set in the end..i never used to like it until recently.. think my tastebuds are changing lol :o)

ah, ok, you could put more chilli in?
TD was very sweet but then i think i got used to it and ate lots! i took it to my son cos he loves it but i think i ate more than him!!

I'll be giving this a go at the weekend, although I'll probably use mutton (I personally think that it stands up to the flavour of curry better).
I will try to dig out the book with the naan bread recipe in - they were divine, but I don't mess about anymore as [a] it was incredibly messy, and [b] my neighbour owns a tandoori business so I get mine from him!
I shall put up my sag aloo later too!

Joanella - if I can find the naan recipe you could press sliced fresh green chilli into the dough of one before cooking. It's mega!

Not water, it's relief is only ever temporary! Minted yoghurt is my pick, especially good with this lamb dish too.

have made a note of this Meanie, i have mint in the greenhouse so all systems go for Saturday..i dont know.. its more "cooks are us" at the moment on here .but i am not complaining..just writing all the recipes down, i will have to get a book to put them all in..:o) well i must bid you goodnight eyes closing as i am typing..spk soon Joan.

Milky tea Sticki!
Lassi is also traditional to eat with a meal. Mix some turmeric in if you have an upset stomach.

Snap - black tea for me too!
The very smell of milk brings about the gag reflex. Love cream though....
The naan bread recipe (when I find it) has yoghurt in the dough.

cream and yoghurt are really good ~ love them both! milk probably not strong enough if that makes sense ~ same with alcohol ~ prefer the higher percent!!! 40%?!
