I have a curry with chopped butternut squash and chicken simmering on top of the woodburner as I write!
Sticki, I have a cellarful of ginormous squashes to carry us through colder days - in fact, OH is downstairs manfully chopping one of them up for gallons of soup. We roast them regularly, usually with red onions and herbs, but I had never thought of adding stilton, (not that we can get it here - can we arrange for one of Pimpernel's famous goodie-laden search parties?) but that sounds absolutely delicious! Supermarket trip tomorrow - do you think it would work with gorgonzola? (maybe a bit fatty - I'll give it a go.)

Oh yes we can pack the searchers and dogs with cheeses!
I don't see why not, it needs a hardish cheese I should think, Stilton probably has a High fat content but it tastes good.
Think it would be good in a soup too?!

I've tried Stilton in soup, but it went awfully stringy and gloopy, and I regretted not just eating it with new bread and a nice crisp apple instead.

oooh nice, maybe if you added only a little and at the end?? not sure, maybe leave it on its own then??? but it worked in the pie!

A spicy curry, always good in colder weather! I like butternut squash, works well roasted with Stilton, I put it in a pie!
