Recipe for Damson Gin/Vodka

1lb Damsons
6oz Sugar
1Ltr Gin/Vodka
Pick your Damsons, remove stalks and any that look damaged. Rinse not wash them under cold running water. Washing them removes the natural yeast from their skins.
Lightly dry them on kitchen paper, prick each one with a fork three times. This lets the juices flow and put them in a wide necked jar. I use 2Ltr Le Parfait jars, they give plenty of room to shake the stuff up.
Add 6oz of sugar to the jar or each jar if you are making Vodka and Gin. Granulated sugar is fine. Close the lid and shake gently twice a day for a week. After a week you will see that the juice in the jar is quite red. Add a Litre of your spirit to each jar and shake once a day for two months.
You can now decant the Gin/Vodka, through muslin, back into their original bottles. The fruit can be left longer in the jars, but I think this impairs the taste with almonds from the stones. You can use the fruit in cakes or trifle, but please don’t drive a car afterwards. I read that someone threw the spirit soaked Damsons under a bush. The next morning they found two hedgehogs snoring together after they consumed them. Enjoy.

maybe Shirleytulips plum cake would work with damsons too!
is the fruit early this year we've apples ripe enough to eat too?

Oh,this takes me back,,my friend used to make this every year,and always gave me a bottle...I don't really drink ,but for this,I made an exception..had a tot every evening..lovely stuff! :o)

Hi Bloomer, I use it in gravy for a rich sauce, sometimes with a spoon of cranberry sauce too-- OH likes duck and it works well or anything needing ' spicing up a bit!

duck would be very good or winter fruits stewed or pour over ice cream
i would rather drink it neat tho!
