Edible root, but I'm growing for its flower.

I haven’t tasted it, but I found that once I grew it, it self seeded very well. The plants are hard to remove if you leave them too long. They have a very long tap root. Beautiful flower though.

That's a really striking flower, I've zoomed in further. It really is an attractive one, love the colour, Sue.
Never tried Salsify.
