Some species have tasty fruit, though I don't know about that particular one.

Most of the Opuntia species fruit taste very similar...however, they're too seedy.

Some, such as O. basilaris, O. microdasys, and O, violacea have nasty dry pods, instead of juicy fruit. But, I agree, even the best prickly pears are too seedy!
